Bill Buford is perhaps the most literary of chefs, having cut his teeth as the founding editor of the iconic literary magazine Granta and founding publisher of Granta Books, followed by a stint as The New Yorker’s fiction editor. The culinary cravings proved too much as he gave it all up to train as an Italian chef, an experience captured in his book Heat. Bill Buford was the founding editor of Granta in England; the literary & fiction editor of the New Yorker; and, for 20+ years, has been writing about food culture for the magazine. He is the author of 2 bestsellers, Heat, about his time in Italian restaurants (and one very famous Tuscan butcher shop), and Dirt, about the 5 years he lived in Lyon, France, training to be a chef and discovering that--it's true!--Italians really did invent French cuisine. He is also the author of Among the Thugs, a conspicuously non-culinary study of English soccer hooligans.
